Instructions
 

Preparation

  • In a microwave-safe mug or small bowl, whisk together eggs, milk, salt, and pepper until well combined.
  • Stir in the chopped spinach and crumbled feta cheese.

Cooking

  • Microwave on high for 1 minute.
  • Stir gently, then microwave for another 30-60 seconds until eggs are set to your liking.
  • Carefully remove from the microwave.

Serving

  • Serve immediately, optionally with halved cherry tomatoes or whole-wheat toast.

Notes

Microwave times vary depending on the wattage; adjust cooking time as needed to prevent overcooking. Be careful when removing the mug from the microwave as it will be hot.
