Heat olive oil in a non-stick pan over medium heat.
Whisk the eggs in a small bowl with a pinch of black pepper, then pour them into the hot pan.
As the eggs begin to set, gently push cooked portions to the center, allowing uncooked egg to flow to the edges.
When the eggs are mostly set but still moist, stir in the chopped spinach and feta cheese; cook for 30 seconds until wilted and melted.
While the eggs are cooking, toast one slice of whole-grain bread.
Transfer the scramble to a plate and serve immediately with toasted bread and sliced avocado.
Notes
For extra flavor, add a dash of hot sauce to the eggs before cooking.
