  • 2 large eggs
  • 1/4 cup fresh spinach, chopped
  • 1 tbsp crumbled feta cheese
  • A pinch black pepper
  • 1/2 tsp olive oil
  • 1 slice whole-grain bread, toasted
  • 1/2 avocado, sliced

  • Heat olive oil in a non-stick pan over medium heat.
  • Whisk the eggs in a small bowl with a pinch of black pepper, then pour them into the hot pan.
  • As the eggs begin to set, gently push cooked portions to the center, allowing uncooked egg to flow to the edges.
  • When the eggs are mostly set but still moist, stir in the chopped spinach and feta cheese; cook for 30 seconds until wilted and melted.
  • While the eggs are cooking, toast one slice of whole-grain bread.
  • Transfer the scramble to a plate and serve immediately with toasted bread and sliced avocado.

Notes

For extra flavor, add a dash of hot sauce to the eggs before cooking.
