Speedy Tuscan Chicken Pasta

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • onion, chopped
  • 2 cloves garlic, minced
  • 1 diced tomatoes, undrained (14.5 oz) can
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup fresh spinach, roughly chopped
  • 8 oz penne or fettuccine pasta cooked according to package directions

Cooking Steps

  • Heat olive oil in a large skillet over medium-high heat. Add chicken cubes and cook until browned, then remove and set aside.
  • Add chopped onion to the skillet and cook until softened. Stir in minced garlic and cook until fragrant.
  • Stir in diced tomatoes, broth, cream, Parmesan, Italian seasoning, salt, and pepper. Simmer for 5 minutes until the sauce slightly thickens.
  • Return the cooked chicken to the skillet. Add fresh spinach and stir until wilted.
  • Add cooked pasta to the skillet and toss to combine thoroughly with the sauce and chicken.
  • Serve immediately, with extra Parmesan cheese if desired.

Notes

For a spicier kick, add a pinch of red pepper flakes with the Italian seasoning. You can also use other pasta shapes like rotini or rigatoni.
