  • 1 lb Lean Ground Beef
  • 1 tbsp Olive Oil
  • 1 medium Red Onion chopped
  • 3 cloves Garlic minced
  • 1.5 cups Cherry Tomatoes halved
  • 1 cup Baby Spinach fresh
  • 0.5 cup Kalamata Olives pitted and halved
  • 1 (14.5 oz) can Diced Tomatoes undrained
  • 1 tsp Dried Oregano
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper

Optional Garnish

  • Fresh basil
  • crumbled feta cheese
  • balsamic glaze

  • Heat a large skillet over medium-high heat. Add ground beef and cook until browned, then drain excess fat and set the beef aside.
  • Add olive oil to the same skillet, sauté chopped red onion for 3-4 minutes until softened, then stir in minced garlic and cook for another minute.
  • Return the cooked beef to the skillet, then add cherry tomatoes, kalamata olives, diced tomatoes, oregano, salt, and pepper, stirring to combine.
  • Bring the mixture to a simmer, then reduce heat to medium-low, cover, and cook for 5-7 minutes until cherry tomatoes are slightly softened.
  • Stir in the fresh baby spinach and cook for 1-2 minutes until it has wilted.
  • Taste and adjust seasoning as needed, then garnish with fresh basil, crumbled feta, or balsamic glaze if desired, and serve warm.

Notes

For extra flavor, use fire-roasted diced tomatoes. This dish is great served over pasta, rice, or with a side of crusty bread. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
