  • 1 lb lean ground turkey 93/7 or 90/10
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 tsp dried Italian seasoning
  • 1/2 tsp red pepper flakes optional, for a kick
  • 1 can (14.5 oz) diced tomatoes undrained
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream or half-and-half
  • 2 cups fresh spinach
  • 1/4 cup Parmesan cheese grated, plus more for serving
  • Salt and freshly ground black pepper to taste
  • Cooked pasta or rice for serving

  • Heat olive oil in a large skillet and brown ground turkey for 5-7 minutes; drain excess fat.
  • Add onion to the skillet and cook for 3-5 minutes until softened, then stir in garlic, Italian seasoning, and red pepper flakes for one minute until fragrant.
  • Pour in diced tomatoes and chicken broth, bring to a simmer, then reduce heat and cook for 5 minutes to meld flavors.
  • Stir in heavy cream and fresh spinach, cooking for 2-3 minutes until the spinach has wilted.
  • Remove from heat, stir in Parmesan cheese, and season with salt and pepper to taste.
  • Serve immediately over cooked pasta or rice, with extra Parmesan if desired.

Notes

This recipe is easily adaptable. Feel free to add other vegetables like bell peppers or mushrooms. For a dairy-free version, use full-fat coconut milk instead of cream and omit the Parmesan cheese.
