  • 1-2 tablespoons olive oil
  • 1 medium onion chopped
  • 2-3 cloves garlic minced
  • Salt & black pepper to taste
  • 2 cups baby spinach
  • 1 cup cherry tomatoes halved
  • ¼ cup sun-dried tomatoes (oil-packed), drained and chopped
  • ½ cup chicken broth or water
  • ¼ cup grated Parmesan cheese (optional, for finishing)
  • Fresh basil or parsley for garnish (optional)

  • Heat olive oil in a large skillet over medium-high heat and brown the ground turkey for 5-7 minutes; drain excess fat and push turkey to one side.
  • Add chopped onion to the skillet and cook until softened, then stir in minced garlic until fragrant.
  • Combine the cooked turkey, onion, and garlic, then season generously with salt and black pepper.
  • Stir in the halved cherry tomatoes, chopped sun-dried tomatoes, and baby spinach, then add chicken broth or water.
  • Cover the skillet and simmer for 3-5 minutes until the spinach wilts and tomatoes soften.
  • Remove from heat, stir in Parmesan cheese if desired, and garnish with fresh basil or parsley before serving.

Notes

For extra flavor, consider adding a pinch of red pepper flakes with the garlic. This dish pairs well with a side of whole wheat pasta or a simple green salad.
