  • 1/8 teaspoon freshly cracked black pepper
  • 2 tablespoons olive oil or vegetable oil

Preparation

  • Grate zucchini and squeeze out excess liquid using a clean kitchen towel to ensure crispy fritters.
  • Combine squeezed zucchini with flour, egg, Parmesan cheese, garlic powder, onion powder, salt, and pepper in a medium bowl; mix gently.
  • Heat a large non-stick skillet over medium-high heat with 2 tablespoons of oil.
  • Drop spoonfuls of zucchini mixture into the hot skillet, flattening them slightly to form 2-3 inch patties.
  • Cook fritters for 2-3 minutes per side until golden brown and cooked through.
  • Transfer cooked fritters to a plate lined with paper towels to drain excess oil, then serve immediately.

Notes

Squeezing out as much liquid as possible from the zucchini is the key to preventing soggy fritters. You can serve these fritters with a variety of dipping sauces, such as marinara, ranch, or a lemon-herb aioli.
