Ingredients
  

Dry Ingredients

  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg

Wet Ingredients

  • ¾ cup fresh or frozen cranberries no need to thaw
  • ½ cup orange juice
  • ¼ cup unsalted butter melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Zest of 1 orange

Preparation

  • Preheat your oven to 350°F (175°C), then grease and flour a 9x5-inch loaf pan or line it with parchment paper.

Combine Dry Ingredients

  • In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg. Stir in cranberries, coating them lightly with flour mixture to prevent sinking.

Combine Wet Ingredients

  • In a separate medium bowl, whisk together the orange juice, melted butter, egg, vanilla extract, and orange zest.

Mix Batter

  • Pour the wet ingredients into the dry ingredients and stir just until moistened; avoid overmixing to ensure a tender loaf.

Bake

  • Pour the batter evenly into the prepared loaf pan and bake for 50-60 minutes, or until a wooden skewer comes out clean.

Cool

  • Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

To enhance the orange flavor, you can add a simple orange glaze made from powdered sugar and orange juice drizzled over the cooled loaf.
