  • 2 large eggs
  • 1 small tortilla (corn or whole wheat)
  • 2 tablespoons shredded cheese (cheddar or Monterey Jack)
  • 1 tablespoon salsa
  • 1 tablespoon cooked black beans
  • 1 teaspoon diced jalapeño (fresh or pickled)
  • Pinch salt and pepper

  • Lightly grease a microwave-safe mug if desired for easier removal.
  • Crumble the tortilla into small pieces and place them at the bottom of the mug.
  • Crack the two eggs into the mug over the tortilla pieces, then add the cheese, salsa, black beans, jalapeño, and a pinch of salt and pepper.
  • Vigorously whisk all ingredients directly in the mug until well combined and the tortilla pieces are coated.
  • Microwave on high for 60 seconds, then remove and stir well to break up any cooked bits.
  • Return to the microwave for another 30-60 seconds, or until the eggs are set to your liking, being careful not to overcook.
  • Carefully remove the mug, and serve immediately, optionally with sour cream or hot sauce.

Notes

Adjust the amount of jalapeño to your preferred spice level. For a richer flavor, you can add a small pat of butter or a drizzle of olive oil to the mug before microwaving.
