Spicy Buffalo Chicken Totchos

These Spicy Buffalo Chicken Totchos are a delicious and easy-to-make dish, combining crispy tater tots with spicy buffalo chicken, melted cheese, and a cool ranch or blue cheese dressing.

  • 1 bag frozen tater tots 28-32 oz / 800-900g
  • 1 lb shredded cooked chicken 450g, rotisserie chicken works great!
  • 1/2 cup buffalo sauce 120ml
  • 2 cups shredded blue cheese crumbles 200g, or cheddar/mozzarella blend
  • 1/4 cup ranch or blue cheese dressing for drizzling
  • 2 celery stalks chopped
  • 2 green onions chopped, for garnish
  • Cooking oil spray optional

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C) and arrange frozen tater tots in a single layer on a large baking sheet, optionally spraying with cooking oil for extra crispiness.
  • Bake the tater tots for 20-25 minutes, flipping them halfway through, until golden brown and crispy.
  • While tots bake, combine shredded cooked chicken with buffalo sauce in a medium bowl, ensuring it's well coated.

Assembly

  • Remove the baking sheet from the oven and sprinkle half of the shredded blue cheese crumbles over the crispy tots.
  • Scatter the buffalo chicken mixture evenly over the cheese and tots.
  • Return to the oven for 5-7 minutes, or until the cheese is melted and bubbly and the chicken is heated through.

Serving

  • Remove from oven, drizzle with ranch or blue cheese dressing, then garnish with chopped celery and green onions.
  • Serve hot and enjoy immediately.

Notes

For a milder version, reduce the amount of buffalo sauce or use a less spicy variety. You can also customize toppings with jalapeños, diced tomatoes, or a sprinkle of fresh cilantro for added flavor and color.
