  • 1 large egg
  • 1 slice cheddar cheese (or 1 tbsp shredded)
  • 1 slice pre-cooked ham
  • 1/2 teaspoon butter or a spray of cooking oil

  • 1 tablespoon finely chopped spinach

Preparation

  • Toast the English muffin.
  • Heat a non-stick pan with butter or cooking spray, then crack the egg into the pan.
  • Season the egg with salt, pepper, red pepper flakes, and spinach; cook until the whites are set, then flip.
  • Cook for 30 seconds more, adding cheddar cheese on top to melt.
  • Warm the pre-cooked ham in the pan alongside the egg.
  • Assemble the sandwich by layering the muffin, egg with cheese and spinach, ham, and the other muffin half.
