  • 1 lb Ground Chicken
  • 1 packet (1 oz) Taco Seasoning Spicy variety if preferred
  • 1/2 cup Water
  • 4 oz Cream Cheese softened
  • 1 packet (1 oz) Ranch Seasoning
  • 1/2 cup Shredded Cheddar Cheese
  • 2 tbsp Finely Diced Jalapeños from a jar or fresh
  • 24 mini Phyllo Shells

  • Sour cream
  • fresh cilantro
  • hot sauce

  • Cook the ground chicken in a large skillet over medium heat until browned, then drain any excess liquid.
  • Stir in the taco seasoning and water, then simmer for 5-7 minutes until most liquid evaporates and the meat is coated.
  • In a separate bowl, combine softened cream cheese and ranch seasoning until smooth.
  • Add the cream cheese mixture, cheddar cheese, and diced jalapeños to the chicken, stirring until melted and evenly distributed.
  • Preheat your oven to 375°F (190°C) and arrange mini phyllo shells in a mini muffin tin.
  • Spoon the chicken mixture evenly into each phyllo shell, filling them almost to the top.
  • Bake for 10-15 minutes, or until the phyllo shells are golden brown and crispy.
  • Carefully remove from the muffin tin and serve warm with optional toppings such as sour cream, fresh cilantro, or hot sauce.

Notes

For extra spice, use a hot variety of taco seasoning or add a pinch of cayenne pepper to the chicken mixture. These bites are perfect as an appetizer or a party snack and can be prepared ahead of time and reheated.
