Ingredients
  

Main Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 can Rotel diced tomatoes with green chilies 10 oz, undrained
  • 1 can black beans 15 oz, rinsed and drained
  • 1 packet taco seasoning 1 oz
  • 1/2 cup chicken broth
  • 1/2 teaspoon cayenne pepper or more, to taste

Optional Toppings

  • Tortillas corn or flour
  • shredded lettuce
  • diced tomatoes
  • shredded cheese
  • sour cream
  • avocado or guacamole
  • salsa
  • fresh cilantro
  • lime wedges

Instructions
 

Preparation

  • Place chicken breasts evenly in the slow cooker bottom.
  • Sprinkle taco seasoning and cayenne pepper over the chicken.

Cooking

  • Pour undrained Rotel and rinsed black beans over the seasoned chicken.
  • Add chicken broth, but do not stir the ingredients.
  • Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until chicken shreds easily.

Finishing Touches

  • Shred the chicken in the slow cooker with two forks.
  • Stir everything together until shredded chicken is coated and mixed with beans and tomatoes.
  • Serve warm with your choice of taco shells and toppings.

Notes

For extra heat, increase the amount of cayenne pepper. This recipe is easily customizable with various toppings to suit your taste preferences.
