Spicy Chorizo & Potato Hash Roll-Up

Ingredients
  

Tortillas

  • 2 Small or medium flour tortillas

Breakfast Meats

  • 1/4 cup Chorizo sausage, crumbled and cooked

Vegetables

  • 1/4 cup Potato hash (pre-made or homemade)
  • 1 tbsp Diced onion
  • 1 tbsp Diced bell pepper

Seasonings

  • Salt, pepper, a dash of hot sauce optional

Instructions
 

Cooking Chorizo

  • Cook chorizo sausage in a pan until crispy and crumbled, then remove from the pan, leaving a small amount of rendered fat.

Sautéing Vegetables

  • In the same pan, sauté diced onion and bell pepper until softened.

Cooking Potato Hash

  • Add potato hash to the pan and cook until heated through and slightly crispy.

Combining Ingredients

  • Combine the cooked chorizo, potato hash, onion, and bell pepper in a bowl. Season with salt, pepper, and hot sauce as desired.

Warming Tortilla

  • Warm a tortilla in a dry pan for 15 seconds per side until pliable.

Assembling Roll-Up

  • Spread the chorizo and potato hash mixture evenly in the center of the warm tortilla, leaving space at the edges. Roll up the tortilla tightly, tucking in the sides as you go.

Finishing Roll-Up

  • Return the rolled-up tortilla to the warm pan, seam-side down, and cook for 1-2 minutes until lightly golden and heated through. Repeat for the second roll-up. Serve immediately.

Notes

For extra flavor, you can add a pinch of smoked paprika to the potato hash while cooking. Adjust the hot sauce to your preferred spice level.
