- 1 lb thawed shrimp, peeled and deveined, tail-on or off
- 2 tbsp olive oil
- 4-5 cloves minced garlic
- 1/2 tsp red pepper flakes or more, to taste
- 2 medium zucchini, spiralized into "zoodles" or thinly julienned
- 1/2 lemon, juiced
- 2 tbsp chopped fresh parsley or cilantro
- Salt and fresh black pepper to taste
Cooking Steps
Heat olive oil in a large skillet over medium-high heat. Add minced garlic and red pepper flakes, then sauté for 30 seconds until fragrant, being careful not to burn the garlic.
Add the thawed shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque.
Add the zucchini noodles to the skillet with the shrimp and toss gently for 1-2 minutes until slightly softened but still al dente.
Remove from heat and squeeze lemon juice over the dish, then stir in fresh parsley or cilantro.
