  • 1 lb thawed shrimp, peeled and deveined, tail-on or off
  • 2 tbsp olive oil
  • 4-5 cloves minced garlic
  • 1/2 tsp red pepper flakes or more, to taste
  • 2 medium zucchini, spiralized into "zoodles" or thinly julienned
  • 1/2 lemon, juiced
  • 2 tbsp chopped fresh parsley or cilantro
  • Salt and fresh black pepper to taste

Cooking Steps

  • Heat olive oil in a large skillet over medium-high heat. Add minced garlic and red pepper flakes, then sauté for 30 seconds until fragrant, being careful not to burn the garlic.
  • Add the thawed shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque.
  • Add the zucchini noodles to the skillet with the shrimp and toss gently for 1-2 minutes until slightly softened but still al dente.
  • Remove from heat and squeeze lemon juice over the dish, then stir in fresh parsley or cilantro.
  • Season with salt and fresh black pepper to taste and serve immediately.
