  • 1 head cauliflower cut into bite-sized florets
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon chili powder
  • 0.25 teaspoon cayenne pepper optional, for extra heat
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste

For Serving

  • Fresh parsley or cilantro chopped, for garnish
  • Vegan ranch for serving
  • tahini dipping sauce for serving

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, toss the cauliflower florets with olive oil until they are evenly coated.
  • Add the minced garlic and all the spices (smoked paprika, chili powder, cayenne pepper, oregano, thyme, salt, and pepper); toss everything well to ensure the florets are fully coated.

Cooking

  • Spread the seasoned cauliflower in a single layer on the prepared baking sheet.
  • Roast for 20-25 minutes, flipping halfway through, until the cauliflower is tender and slightly caramelized.

Serving

  • Remove the cauliflower from the oven, transfer it to a serving platter, and garnish generously with fresh parsley or cilantro.
  • Serve the bites hot with your choice of vegan ranch or tahini dipping sauce.

Notes

For extra crispiness, ensure the cauliflower is spread in a single layer without overcrowding the baking sheet. You can adjust the cayenne pepper to your preferred spice level or omit it entirely for a milder flavor.
