Ingredients
  

For the Chicken Rice Balls:

  • 2 cups cooked jasmine rice preferably day-old or cooled
  • 1 cup shredded cooked chicken poached or steamed
  • 1 tbsp sesame oil
  • 1/2 tsp salt
  • Pinch white pepper

For the Spicy Ginger-Scallion Sauce:

  • 1/2 cup finely minced green onions white and green parts
  • 1/4 cup finely grated fresh ginger
  • 1/4 cup neutral oil like canola or vegetable
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 1-2 tsp sriracha or to taste

Instructions
 

Chicken Rice Balls

  • Combine cooked rice, shredded chicken, sesame oil, salt, and white pepper in a large bowl and mix until well combined.
  • Dampen your hands, then roll 1-2 tablespoons of the mixture into bite-sized balls and set aside.

Spicy Ginger-Scallion Sauce

  • In a heatproof bowl, combine minced green onions, grated ginger, salt, white pepper, and sriracha.
  • Heat a neutral oil in a small saucepan until shimmering hot, then carefully pour it over the ginger-scallion mixture.
  • Stir the mixture thoroughly to combine all ingredients.

Serve

  • Arrange the Chicken Rice Balls on a platter and serve with the Spicy Ginger-Scallion Sauce for dipping.

Notes

For an extra kick, add a pinch of red pepper flakes to the sauce. This dish can be served warm or at room temperature. Ensure the rice is cooled for easier handling when forming the balls.
