Spicy Roasted Chickpea & Bell Pepper Skewers

Ingredients
  

Main Ingredients

  • 1 can (15 oz) chickpeas rinsed and drained
  • 2 bell peppers any color, cut into 1-inch pieces
  • 1 red onion cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder or more, to taste
  • 1/4 tsp cumin
  • to taste Salt and black pepper

For Serving (Optional)

  • fresh cilantro or parsley chopped
  • Vegan mayo mixed with a squeeze of lime juice and a dash of hot sauce

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). In a large bowl, combine the rinsed chickpeas, bell pepper pieces, and red onion pieces.

Seasoning

  • Drizzle olive oil over the chickpeas and vegetables, then add smoked paprika, chili powder, cumin, salt, and black pepper. Toss well to ensure even coating.

Assembly

  • Thread the seasoned chickpeas, bell peppers, and red onion onto skewers, alternating the ingredients for an appealing look.

Roasting

  • Place the skewers on a parchment-lined baking sheet and roast for 20-25 minutes, flipping halfway. Cook until the vegetables are tender-crisp and the chickpeas are slightly browned.

Serving

  • Serve the skewers immediately. Optionally garnish with fresh cilantro or parsley and serve with a spicy vegan mayo dipping sauce.

Notes

If using wooden skewers, soak them in water for 30 minutes prior to use to prevent burning. Adjust chili powder to your preferred spice level.
