  • 1 lb boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 tbsp vegetable oil

Peanut Sauce

  • 1/2 cup creamy natural peanut butter
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • 2 tbsp honey
  • 1 tbsp grated fresh ginger
  • 2 cloves garlic, minced
  • 1/4 cup water or coconut milk
  • 1-2 tbsp Sriracha or chili garlic sauce to taste

Vegetables

  • 1 cup broccoli florets
  • 1 red bell pepper, thinly sliced
  • 1/2 cup snap peas

For Garnish

  • chopped peanuts
  • fresh cilantro
  • sliced green onions

Instructions
 

Cooking the Chicken

  • Heat oil in a large skillet or wok over medium-high heat. Add chicken and cook, stirring occasionally, until browned and cooked through, then set aside.

Preparing the Peanut Sauce

  • In a medium bowl, whisk together all peanut sauce ingredients (peanut butter, soy sauce, lime juice, honey, ginger, garlic, water/coconut milk, and Sriracha) until smooth.

Stir-frying Vegetables

  • Add broccoli, bell pepper, and snap peas to the same skillet. Stir-fry for 3-5 minutes until the vegetables are tender-crisp.

Combining and Simmering

  • Return the cooked chicken to the skillet with the vegetables. Pour the prepared peanut sauce over the ingredients and stir well to coat everything.

Finishing and Serving

  • Simmer gently for 2-3 minutes, stirring occasionally, until the sauce slightly thickens and adheres to the chicken and vegetables. Remove from heat, garnish with chopped peanuts, cilantro, and green onions, then serve immediately over rice or noodles.

Notes

Adjust Sriracha or chili garlic sauce to your preferred spice level. Serve with jasmine rice or rice noodles for a complete meal.
