  • 12 large white mushrooms
  • 4 oz cream cheese, softened
  • 1/4 cup breadcrumbs
  • 2 tbsp Parmesan cheese, grated
  • 1 clove garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 6 pimento-stuffed green olives, halved
  • few drops red food coloring (optional)

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C) and gently remove stems from mushrooms, finely chopping the stems.
  • In a bowl, combine cream cheese, breadcrumbs, Parmesan, minced garlic, parsley, salt, pepper, and chopped mushroom stems.
  • Fill each mushroom cap with the cream cheese mixture, mounding it slightly.
  • Place a halved pimento-stuffed olive, cut-side down, in the center of each filled mushroom to create the "pupil" effect.
  • Arrange mushrooms on a baking sheet and bake for 20-25 minutes, or until golden and heated through.
  • For an extra gory effect, use a toothpick to dab a few drops of red food coloring around the olive "iris" before serving.

Notes

For a vegetarian option, ensure your Parmesan cheese is suitable for vegetarians. These can be prepared a few hours in advance and refrigerated before baking.
