  • 2 large eggs
  • 1 splash milk or water
  • 1/2 tablespoon olive oil or butter
  • 1/4 cup chopped bell peppers any color
  • 2-3 smoked salmon torn into pieces
  • 1/4 avocado diced
  • Salt and black pepper to taste
  • Fresh dill for garnish (optional)

Instructions
 

Preparation

  • Whisk eggs with milk or water, salt, and pepper in a small bowl until well combined.

Cooking

  • Heat olive oil or butter in a non-stick pan over medium heat.
  • Sauté chopped bell peppers for 2-3 minutes until slightly softened.
  • Pour egg mixture into the pan and gently push cooked portions to the center as eggs set.
  • Just before eggs are fully set, fold in torn smoked salmon pieces and cook for 30 seconds more.
  • Remove from heat and transfer to a plate.

Serving

  • Top with diced avocado and optional fresh dill. Serve immediately.

Notes

For extra flavor, add a pinch of red pepper flakes to the bell peppers. Adjust cooking time for desired egg consistency; some prefer a runnier scramble while others like it well-done.
