Sweet Potato & Egg Hash with Spinach

Ingredients
  

Base

  • 1 medium sweet potato diced
  • 2 large eggs

  • 1 cup fresh spinach

Instructions
 

Cooking

  • Heat olive oil in a non-stick skillet over medium heat.
  • Add diced sweet potato to the skillet and cook for 8-10 minutes, stirring occasionally, until tender and slightly browned.
  • Push the sweet potatoes to one side of the pan and crack the eggs directly into the other side, then season with salt and pepper.
  • Cook the eggs to your desired doneness.
  • During the last minute of cooking, add fresh spinach to the sweet potato side and toss until wilted.
  • Serve the sweet potato and spinach hash immediately alongside the cooked eggs.

Notes

For extra flavor, try adding a pinch of paprika or garlic powder to the sweet potatoes while they cook.
