  • 1 packet ranch seasoning mix (1 oz)
  • 1/4 cup chicken broth
  • 1/2 cup chopped onion optional
  • 1/2 cup chopped bell pepper optional
  • Fresh parsley or cilantro for garnish (optional)

Cooking Steps

  • Lightly spray the inside of your slow cooker with cooking oil or use a slow cooker liner for easy cleanup.
  • Place the chicken thighs into the bottom of the slow cooker.
  • Sprinkle the ranch seasoning mix over the chicken, then add the chopped onion and bell pepper. Pour the BBQ sauce and chicken broth over everything.
  • Gently stir to ensure the chicken is evenly coated.
  • Secure the lid and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender.
  • Shred the cooked chicken directly in the crockpot using two forks, stirring it into the sauce.
  • Garnish with fresh parsley or cilantro if desired, and serve over rice, in buns, or with your favorite side.

Notes

This recipe is incredibly versatile! Feel free to adjust the amount of BBQ sauce or ranch seasoning to your taste. For an extra kick, add a pinch of red pepper flakes. This dish is also great for meal prepping.
