  • 1 sheet puff pastry thawed
  • 10 ounces frozen chopped spinach thawed and very dry
  • 4-6 ounces feta cheese crumbled

Preparation

  • Thaw the puff pastry and frozen spinach; squeeze all liquid from the spinach.
  • Combine the squeezed spinach with crumbled feta cheese in a bowl, mixing well.
  • Unroll the thawed puff pastry on a lightly floured surface and spread the spinach-feta mixture evenly, leaving a small border.
  • Roll the pastry tightly into a log from the long edge.
  • Optional: Refrigerate the log for 15-20 minutes to firm up for easier slicing.

Baking

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Slice the log into 1/2 to 3/4-inch thick rounds and place them on the prepared baking sheet.
  • Bake for 15-20 minutes until golden brown and puffed.
  • Cool slightly on the baking sheet, then transfer to a wire rack to cool completely. Serve warm or at room temperature.

Notes

For extra flavor, you can add a pinch of garlic powder or onion powder to the spinach mixture. Ensure the spinach is as dry as possible to prevent soggy pinwheels. These pinwheels are great for meal prepping and can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a warm oven for best results.
