  • 1 tbsp chia seeds
  • 1/2 cup coconut milk or any milk of choice
  • 1/4 cup diced mango
  • 1/4 cup pineapple chunks
  • 1 tbsp shredded coconut
  • 1 tsp honey or maple syrup optional

Preparation

  • In a microwave-safe bowl or jar, combine rolled oats, chia seeds, and coconut milk, then stir well.
  • Heat in the microwave for 1.5 to 2 minutes until thickened, or prepare overnight in the fridge for a no-cook option.
  • Stir in the diced mango and pineapple chunks.
  • Top with shredded coconut and drizzle with honey or maple syrup if desired before serving immediately.

Notes

For meal prepping, prepare the oat and chia mixture the night before and add the fruit and toppings in the morning.
