Ingredients
  

Main Ingredients

  • 1/2 cup rolled oats
  • 1 cup coconut milk (or other plant-based milk)
  • 1 tablespoon chia seeds
  • 1 teaspoon maple syrup (or honey)
  • 1/4 cup fresh or frozen mango chunks, diced
  • 1 tablespoon shredded unsweetened coconut

  • extra mango
  • shredded coconut
  • a few fresh mint leaves

Instructions
 

Preparation

  • Combine rolled oats, coconut milk, chia seeds, and maple syrup in a jar or sealable container and stir well.
  • Gently fold in the diced mango chunks and shredded coconut.
  • Cover the container and refrigerate overnight, or for at least 4 hours, to allow the oats to soak and thicken.

Serving

  • In the morning, stir the oats and add more coconut milk if needed to reach desired consistency.
  • Garnish with additional mango, shredded coconut, or fresh mint leaves before serving.

Notes

For a thicker consistency, reduce the amount of coconut milk slightly. You can also customize by adding other fruits or nuts.
