Instructions
Preparation
Combine rolled oats, coconut milk, chia seeds, and maple syrup in a jar or sealable container and stir well.
Gently fold in the diced mango chunks and shredded coconut.
Cover the container and refrigerate overnight, or for at least 4 hours, to allow the oats to soak and thicken.
Serving
In the morning, stir the oats and add more coconut milk if needed to reach desired consistency.
Garnish with additional mango, shredded coconut, or fresh mint leaves before serving.
Notes
For a thicker consistency, reduce the amount of coconut milk slightly. You can also customize by adding other fruits or nuts.
