  • 1/2 cup rolled oats
  • 1 cup coconut milk canned light or carton
  • 1 tablespoon chia seeds
  • 1 teaspoon maple syrup or agave to taste

Toppings

  • 1/4 cup diced fresh or frozen mango
  • 1 tablespoon shredded unsweetened coconut flakes

Instructions
 

Preparation

  • Combine rolled oats, coconut milk, chia seeds, and maple syrup in a jar or airtight container.
  • Stir well until all ingredients are thoroughly mixed and the oats are submerged.
  • Cover and refrigerate for at least 4 hours or overnight.

Serving

  • In the morning, stir the oats and add more coconut milk if needed.
  • Top with diced mango and shredded coconut flakes before serving.

Notes

For a thicker consistency, reduce the amount of coconut milk by a few tablespoons. Adjust sweetness to your preference with more or less maple syrup or agave.
