Tropical Overnight Oats with Mango & Coconut

Main Ingredients

  • 1/2 cup rolled oats
  • 1 cup coconut milk
  • 1 tbsp chia seeds
  • 1/4 cup diced fresh mango
  • 1 tbsp shredded unsweetened coconut
  • 1/2 tsp vanilla extract
  • turmeric for color, optional

Optional Sweetener

  • honey or maple syrup drizzle, optional

Instructions
 

Preparation

  • Combine all ingredients except honey/maple syrup in a jar or container.
  • Stir everything well to distribute chia seeds evenly and prevent clumping.

Chilling

  • Cover and refrigerate overnight, or for a minimum of 4 hours, until the oats are soft, have absorbed the liquid, and the mixture is thick.

Serving

  • In the morning, stir the mixture.
  • Add a drizzle of honey or maple syrup for extra sweetness, if desired.
  • Serve chilled and enjoy your tropical overnight oats.

Notes

For a creamier texture, use full-fat coconut milk. You can also add other tropical fruits like pineapple or banana.
