  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • Salt and black pepper to taste
  • 1 (15 oz) can cannellini beans rinsed and drained
  • 1 (14.5 oz) can diced tomatoes undrained
  • 1 cup chicken broth
  • 5 oz fresh spinach
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp red pepper flakes optional
  • 1/4 cup grated Parmesan cheese for serving

Cooking Steps

  • Heat olive oil in a large skillet, then cook ground turkey until browned and drain any excess fat.
  • Add chopped onion and minced garlic to the skillet, sauté until softened, and season with salt and pepper.
  • Stir in cannellini beans, diced tomatoes, chicken broth, oregano, basil, and red pepper flakes.
  • Bring the mixture to a simmer, then reduce heat to medium-low.
  • Gradually add fresh spinach, allowing it to wilt, and continue cooking until the sauce thickens.
  • Taste and adjust seasonings as needed, then serve hot with grated Parmesan cheese.

Notes

This skillet meal is quick to prepare and makes great leftovers! You can easily adjust the spice level by adding more or fewer red pepper flakes. Fresh herbs can be used in place of dried; double the amount if substituting.
