  • 1 large flour tortilla
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup scrambled eggs (cooked)
  • 2 slices cooked bacon, crumbled
  • 1 tablespoon finely diced bell pepper (any color)
  • 1 teaspoon mayonnaise
  • Hot sauce for serving (optional)

Preparation

  • Ensure your scrambled eggs and crumbled bacon are cooked and warmed, then dice the bell pepper.
  • Place a large non-stick skillet or cast-iron pan over medium heat to warm it up.
  • Lay the tortilla flat and spread half of the shredded cheddar cheese over one half, leaving a small border.
  • Add the scrambled eggs, crumbled bacon, and diced bell pepper on top of the cheese, then cover with the remaining cheddar.
  • Fold the side closest to the filling over it, then fold in the two opposite sides, and finally roll the entire burrito tightly from the bottom.
  • Generously spread mayonnaise on the top and bottom exterior of the folded burrito.
  • Carefully place the burrito seam-side down into the hot skillet, cooking for 3-5 minutes per side until golden brown and crispy, pressing gently for even browning.
  • Remove from the pan, slice in half if desired, and serve immediately while hot, with hot sauce if preferred.

Notes

For extra flavor, consider adding a pinch of garlic powder or smoked paprika to your eggs before scrambling.
