  • 30-32 oz bag Frozen Hash Browns
  • 1 lb Breakfast Sausage mild or spicy
  • 10-12 Large Eggs
  • 1 cup Milk whole milk
  • 1/2 cup Heavy Cream
  • 2 cups Shredded Cheese cheddar-jack or sharp cheddar
  • 1/2 medium Onion finely chopped
  • 1/2 Bell Pepper any color, finely chopped
  • Salt To taste
  • Black Pepper To taste
  • 1 tsp Garlic Powder
  • 1/2 tsp Dried Mustard
  • 2 tbsp Butter for greasing

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Brown the breakfast sausage in a large skillet over medium-high heat, breaking it up as it cooks. Drain excess grease and set aside.
  • Lightly sauté the chopped onion and bell pepper in the same skillet for 3-5 minutes until softened, if desired, then remove and set aside.

Assembly

  • Grease a 9x13 inch baking dish with butter.
  • Spread the frozen hash browns evenly across the bottom of the dish.
  • Sprinkle the cooked sausage, and sautéed onion and bell pepper over the hash browns.
  • In a large bowl, whisk together the eggs, milk, heavy cream, salt, black pepper, garlic powder, and dried mustard.
  • Pour the egg mixture evenly over the hash brown and sausage layers. Sprinkle generously with shredded cheese.

Baking

  • Cover the baking dish tightly with aluminum foil and bake for 30 minutes.
  • Remove the foil and bake for another 20-30 minutes, or until the casserole is set in the center, golden brown, and the cheese is bubbly. An inserted knife should come out clean.

Serving

  • Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

For extra flavor, consider adding a pinch of red pepper flakes to the egg mixture. You can assemble this casserole the night before and refrigerate it, then bake in the morning for a convenient breakfast. Adjust baking time if baking from cold.
