Ingredients
  

For the Fudgy Brownie Layer:

  • ½ cup unsalted butter (113g) melted
  • 1 cup granulated sugar (200g)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour (60g)
  • ½ cup unsweetened cocoa powder (45g, good quality makes a difference!)
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup chocolate chips (milk, semi-sweet, or dark, your preference)

For the Chewy Chocolate Chip Cookie Layer:

  • ½ cup unsalted butter (113g) softened
  • ¼ cup granulated sugar (50g)
  • ½ cup packed light brown sugar (100g)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour (150g)
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup chocolate chips (180g)

Instructions
 

Prep & Brownie

  • Preheat oven to 350°F (175°C) and line a 9x13 inch baking pan with lightly greased parchment paper, leaving an overhang.
  • Whisk melted butter and granulated sugar, then beat in eggs and vanilla. In a separate bowl, combine flour, cocoa powder, baking powder, and salt, then gradually add to wet ingredients and stir in chocolate chips.
  • Spread the brownie batter evenly in the prepared pan and bake for 15-18 minutes until mostly set but still slightly soft.

Cookie & Assembly

  • Cream softened butter, granulated sugar, and brown sugar until fluffy. Beat in egg and vanilla, then add combined flour, baking soda, and salt, and stir in chocolate chips.
  • Remove brownie from oven and evenly drop spoonfuls of cookie dough over the warm brownie layer.
  • Return to oven and bake for 20-25 minutes until the cookie layer is golden brown and set. A toothpick inserted into the brownie should come out with moist crumbs.

Cooling

  • Allow brookies to cool completely in the pan on a wire rack before lifting out and cutting into squares.

Notes

Cooling completely is essential for clean cuts and the best texture. You can use any type of chocolate chips you prefer for both layers. For an extra touch, sprinkle a little flaky sea salt on top before baking.
