  • 1 large bag sturdy corn tortilla chips about 13 oz
  • 1 lb ground beef or turkey
  • 1 (15 oz) can black beans rinsed and drained
  • 1 (15 oz) can corn drained (or 1 cup frozen corn)
  • 1 (10 oz) can Rotel diced tomatoes with green chilies undrained
  • 1 packet taco seasoning 1.25 oz
  • 2 cups shredded Colby Jack or Mexican blend cheese
  • 1/2 cup pickled jalapeño slices

  • sliced green onions

Instructions
 

Preparation

  • Brown the ground beef or turkey in a large skillet, then drain any excess grease. Stir in taco seasoning, Rotel tomatoes, black beans, and corn, simmering for 5-7 minutes to meld flavors.
  • Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper for easy cleanup.

Layering and Baking

  • Spread half of the tortilla chips on the baking sheet and sprinkle with half of the shredded cheese.
  • Spoon half of the meat mixture and scatter half of the pickled jalapeño slices over the cheesy chips.
  • Repeat the layers with the remaining chips, cheese, meat mixture, and jalapeños.
  • Bake for 8-12 minutes, or until the cheese is melted and bubbly and the chips are lightly toasted.

Serving

  • Remove from the oven and let cool for a minute or two before serving directly or transferring to a platter.

Notes

Keep a close eye on the nachos while baking to prevent burning. Serve with your favorite optional toppings like sour cream, guacamole, or fresh salsa.
