Ingredients

  • 1 lb lean ground beef (450g)
  • ½ head green cabbage thinly sliced or shredded
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1-inch piece ginger grated or minced

Sauce

  • 2 tbsp soy sauce or tamari (for gluten-free)
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • ½ tsp red pepper flakes (optional)

Other

  • 2 tbsp avocado oil or other high-heat cooking oil
  • Salt and black pepper to taste
  • Green onions chopped (for garnish)
  • Sesame seeds (for garnish)

Instructions
 

Preparation

  • Slice cabbage, dice onion, mince garlic, and grate ginger. Whisk together soy sauce, rice vinegar, sesame oil, and red pepper flakes for the sauce.

Cooking

  • Heat 1 tablespoon of oil in a skillet, brown the ground beef, then drain fat and set aside.
  • Add the remaining oil to the skillet, sauté the diced onion for 2-3 minutes until soft.
  • Stir in minced garlic and grated ginger and cook for another minute until fragrant.
  • Add shredded cabbage to the skillet and cook for 5-7 minutes, until softened but still crisp.
  • Return the cooked beef to the skillet, pour in the sauce, and toss to combine; cook for 2-3 minutes until the sauce thickens.

Finishing Touches

  • Season with salt and pepper to taste, then garnish with green onions and sesame seeds before serving.

Notes

For a spicier kick, add a pinch more red pepper flakes. You can also add other low-carb vegetables like bell peppers or mushrooms.
