Main Fondue

  • 12 oz High-Quality Chocolate good quality (dark, milk, or a mix), finely chopped or in form.
  • 1 cup Heavy Cream at least 36% milk fat
  • 2 tablespoons Unsalted Butter cut into small pieces

Optional Flavoring

  • 1-2 tablespoons Liqueur or Extract e.g., KahlĂșa, Grand Marnier, Bailey's, or 1 teaspoon vanilla/orange extract

  • Salt Pinch

Preparation

  • Finely chop the chocolate and set it aside.
  • Gently heat the heavy cream in a heavy-bottomed saucepan or double boiler until warm and steamy, avoiding a boil.

Melting

  • Add unsalted butter to the warm cream and stir until completely melted and incorporated.
  • Remove from heat, add chopped chocolate, and let it sit for 2-3 minutes to begin melting.
  • Gently stir from the center outwards until the chocolate is fully melted and the mixture is smooth and glossy.

Finishing and Serving

  • Stir in your chosen liqueur or extract and a pinch of salt until well combined.
  • Pour the fondue into a warmed fondue pot and keep it warm on the lowest setting.
  • Serve immediately with your favorite dippers.

Notes

Ensure not to overheat the chocolate, as this can cause it to seize. If the fondue becomes too thick, you can gently reheat it over simmering water while stirring continuously.
