Ingredients
  

Salad

  • 1 can (15 oz) cooked chickpeas rinsed and drained
  • 1 medium cucumber diced
  • 2 medium ripe tomatoes diced
  • ½ small red onion finely diced
  • 1 bell pepper diced (any color)
  • ¼ cup fresh coriander (cilantro) chopped
  • 1 small green chili finely chopped (optional)

Dressing

  • 1 lemon for its juice
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon chaat masala
  • ½ teaspoon cumin powder
  • ¼ teaspoon black salt (Kala Namak)
  • ¼ teaspoon freshly ground black pepper

Instructions
 

Preparation

  • Rinse and drain the canned chickpeas thoroughly under cold water.
  • Dice the cucumber, tomatoes, red onion, and bell pepper into even pieces. Finely chop the fresh coriander and green chili, if desired.

Assemble

  • In a large mixing bowl, combine the rinsed chickpeas, diced vegetables, and chopped coriander (and green chili).
  • In a separate small bowl, whisk together the lemon juice, olive oil, chaat masala, cumin powder, black salt, and black pepper until well combined.

Serve

  • Pour the dressing over the salad ingredients and gently toss until everything is evenly coated.
  • Let the salad sit for 5-10 minutes to allow the flavors to meld, then taste and adjust seasoning as needed before serving.

Notes

For an added crunch, you can toast some pita bread and crumble it over the salad before serving. This salad is also great for meal prepping as the flavors deepen over time.
