Main

  • 1 lb boneless, skinless chicken breast cut into 1-inch cubes
  • 1 red bell pepper cut into 1-inch pieces
  • 1 yellow bell pepper cut into 1-inch pieces
  • 1 red onion cut into wedges
  • 1 zucchini sliced
  • 1 pint cherry tomatoes
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and freshly ground black pepper to taste

For Serving (Optional)

  • 1/2 cup crumbled feta cheese
  • Fresh parsley chopped (for garnish)
  • Cooked quinoa or brown rice for serving

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and prepare all the vegetables and chicken as directed.
  • In a large bowl, combine the chicken, bell peppers, onion, zucchini, and cherry tomatoes.
  • Drizzle with olive oil, then season with oregano, garlic powder, salt, and pepper, tossing to coat evenly.

Cooking

  • Spread the chicken and vegetable mixture in a single layer on a large sheet pan.
  • Roast for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender-crisp and slightly caramelized.

Serving

  • Remove the sheet pan from the oven and, if desired, sprinkle with crumbled feta cheese.
  • Garnish with fresh chopped parsley and serve immediately with cooked quinoa or brown rice.

Notes

For extra flavor, you can marinate the chicken in a little lemon juice before roasting. This recipe is also great for meal prepping; simply divide into containers after cooking for easy lunches or dinners throughout the week.
