Ingredients
  

Chicken & Veggies

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 bell pepper (any color)
  • 1 red onion
  • 1 zucchini
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 0.5 tsp garlic powder for chicken & veggies
  • 0.25 tsp salt for chicken & veggies
  • 0.125 tsp black pepper for chicken & veggies

Herby Ranch

  • 0.5 cup plain Greek yogurt
  • 0.25 cup mayonnaise
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh chives, chopped
  • 1 tbsp fresh parsley, chopped
  • 0.5 tsp garlic powder for Herby Ranch
  • 0.25 tsp onion powder
  • 1 tbsp lemon juice
  • Salt and black pepper to taste (for Herby Ranch)

Serving

  • 6-8 pita breads

Instructions
 

Preparation

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Combine chicken, bell pepper, red onion, and zucchini in a bowl; drizzle with olive oil and season with oregano, garlic powder, salt, and pepper, then toss to coat.

Roasting

  • Spread the seasoned mixture in a single layer on the baking sheet and roast for 20-25 minutes until chicken is cooked through and vegetables are tender-crisp.

Herby Ranch

  • While roasting, whisk together Greek yogurt, mayonnaise, dill, chives, parsley, garlic powder, onion powder, lemon juice, salt, and pepper in a small bowl; adjust seasoning to taste.

Serving

  • Warm pita breads in a skillet, microwave, or oven just before serving.
  • Fill warm pitas with roasted chicken and vegetables, then drizzle generously with the Herby Ranch.

Notes

For extra flavor, marinate the chicken in the olive oil and spices for at least 30 minutes before roasting. You can also customize the vegetables based on what's in season. If you don't have fresh herbs, you can use dried herbs, but reduce the quantity by half and rehydrate them in a little olive oil or lemon juice before adding to the ranch. Adjust spice levels to your preference by adding a pinch of red pepper flakes to the chicken and veggies, or a dash of hot sauce to the ranch.
