  • 1.5 lbs Chicken Breasts boneless, skinless, cut into 1-inch pieces
  • 1 cup Orzo Pasta about 6 oz
  • 2 cups Fresh Strawberries hulled and quartered
  • 1/2 cup Balsamic Vinegar good quality
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic minced
  • 1 tablespoon Honey or Maple Syrup
  • 1/4 cup Fresh Basil or Mint chopped, for garnish
  • Salt To taste
  • Black Pepper To taste

Preparation

  • Pat the chicken dry with paper towels and season with salt and pepper.

Cooking

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat, then add the chicken and cook for 5-7 minutes until golden brown and cooked through. Remove the chicken and set aside.
  • In the same skillet, add the remaining olive oil, minced garlic, quartered strawberries, balsamic vinegar, and honey or maple syrup. Simmer for 8-10 minutes, stirring occasionally, until the strawberries soften and the sauce thickens.
  • Cook the orzo according to package directions in salted boiling water until al dente, then drain.
  • Add the cooked chicken and drained orzo back into the skillet with the strawberry balsamic glaze and toss to coat.
  • Adjust seasoning if needed, then garnish with fresh basil or mint before serving.

Notes

For a smoother glaze, gently mash some of the strawberries as they cook. Ensure good quality balsamic vinegar for the best flavor.
