Vibrant Umami Rice & Veggie Power Bowl

Ingredients
  

Main Ingredients

  • 1 cup brown rice or quick-cooking variety
  • 2 cups mixed vegetables broccoli florets, bell peppers, zucchini, carrots, snap peas
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1/4 cup Nutritional Yeast

Dressing

  • 2 tablespoons Tamari or low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic minced

Optional Toppings

  • Toasted sesame seeds

Instructions
 

Preparation

  • Cook brown rice as directed on the package, then preheat your oven to 400°F (200°C).

Roasting

  • Toss vegetables with olive oil, salt, and pepper on a baking sheet, spreading them in a single layer. Roast for 15-20 minutes until tender-crisp and lightly caramelized.

Dressing

  • Whisk together tamari or soy sauce, rice vinegar, grated ginger, and minced garlic in a small bowl.

Assembly

  • Transfer cooked rice and roasted vegetables to a large bowl. Pour the dressing over them and sprinkle with nutritional yeast.
  • Gently toss until all ingredients are well combined and evenly coated with nutritional yeast.

Serving

  • Divide the power bowl into serving bowls and add optional toppings if desired. Serve immediately.

Notes

For extra protein, add some cooked edamame or baked tofu. Feel free to use any seasonal vegetables you have on hand for this versatile bowl.
