  • 6 cups Pretzels mini pretzel twists or pretzel snaps
  • 1 cup Unsalted Butter 2 sticks or 226g, cut into pieces
  • 1 cup Packed Light Brown Sugar
  • 1/2 cup Heavy Cream double cream
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Flaky Sea Salt plus extra for finishing
  • 12 oz Semi-Sweet or Dark Chocolate Chips/Melting Wafers
  • 1/2 cup White Chocolate Chips for melting and drizzling
  • 1/4 cup Freeze-Dried Raspberries crushed

Preparation

  • Line a baking sheet with parchment paper and spread pretzels evenly to fill any gaps.
  • Melt butter in a saucepan, then add brown sugar and heavy cream; bring to a boil, then simmer until thickened.
  • Remove from heat, stir in vanilla and 1 teaspoon of sea salt, and pour the caramel over the pretzels.
  • Chill the pretzel sheet for 15-20 minutes until the caramel is firm.
  • Melt the semi-sweet or dark chocolate using a microwave or double boiler.
  • Pour the melted chocolate over the chilled caramel layer and spread it evenly.
  • Melt the white chocolate chips separately, drizzle over the dark chocolate, and sprinkle with crushed freeze-dried raspberries.
  • Return the baking sheet to the refrigerator for 1-2 hours until the chocolate is completely firm.
  • Lift the bark from the sheet and break it into irregular pieces before serving.

Notes

For an extra touch, you can lightly toast the pretzels before adding the caramel to enhance their flavor. Ensure all ingredients are at room temperature for a smoother caramel. The caramel can become very hot, so handle with care. If you don't have freeze-dried raspberries, you can use other freeze-dried fruits or chopped nuts for variety. Store the bark in an airtight container at room temperature or in the refrigerator for extended freshness.
