  • 1 teaspoon cornstarch (or arrowroot powder)
  • Salt and freshly ground black pepper to taste

  • Whisk together coconut milk, lemon zest and juice, minced garlic, olive oil, cornstarch, salt, and pepper in a medium bowl to create the sauce.
  • Pat the cod fillets dry and place them in the prepared baking dish.
  • Pour the sauce evenly over the cod fillets, ensuring they are well coated, then bake for 12-18 minutes until the fish flakes easily.
  • Remove the dish from the oven, garnish with fresh parsley and a squeeze of lemon juice if desired, and serve immediately.

Notes

For extra flavor, marinate the cod in a little lemon juice and salt for 15 minutes before baking. Ensure the cod is fully thawed and patted dry to prevent a watery sauce.
