Ingredients
  

Meat Mixture

  • 1 lb ground beef or turkey (lean)
  • 1 packet taco seasoning
  • 1/2 cup water

Cream Cheese Mixture

  • 1 (8 oz) package cream cheese softened
  • 1 (1 oz) packet ranch seasoning mix

Toppings & Shells

  • 1/2 cup shredded cheddar cheese (or Mexican blend)
  • 1/4 cup chopped green onions or chives
  • 24 mini phyllo shells or tortilla scoop chips

Instructions
 

Cooking the Meat

  • In a large skillet, cook the ground beef or turkey over medium heat until no longer pink, then drain any excess fat.
  • Add taco seasoning and water to the meat, stir well, and simmer for 5-7 minutes until liquid evaporates and the meat is flavorful, then set aside to cool.

Preparing the Cream Cheese Mixture

  • In a medium bowl, combine softened cream cheese and ranch seasoning mix, stirring until smooth and well combined.

Assembling the Bites

  • Arrange phyllo shells or tortilla scoop chips on a serving platter.
  • Spoon a small amount of the seasoned ground meat into each phyllo shell or tortilla chip.
  • Dollop a small amount of the ranch cream cheese mixture over the meat in each bite.
  • Sprinkle each bite with shredded cheddar cheese and chopped green onions or chives.
  • Serve immediately, or chill briefly to allow the flavors to meld.

Notes

For best results, allow the cooked meat to cool slightly before filling the phyllo shells to prevent them from getting soggy. Adjust the amount of ranch seasoning to your taste. These bites are great for parties and can be prepared in advance and chilled.
