  • 1 tbsp olive oil
  • 1 lb ground chicken (or shredded pre-cooked chicken)
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper (any color) chopped
  • 1 (15-ounce) can black beans rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes undrained
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 0.5 tsp smoked paprika
  • 0.25 tsp dried oregano
  • Salt and freshly ground black pepper to taste
  • 0.5 cup chicken broth optional, for extra moisture
  • 12 small corn or flour tortillas

For Serving

  • 1 cup shredded Monterey Jack or cheddar cheese
  • Fresh cilantro chopped, for garnish
  • 1 lime cut into wedges, for serving
  • Optional toppings sour cream, salsa, avocado slices

Cooking Instructions

  • Heat olive oil in a large skillet over medium heat. If using ground chicken, cook until browned and drain excess fat; if using pre-cooked chicken, add to warm through.
  • Add onion and bell pepper to the skillet and cook for 5-7 minutes until softened. Stir in minced garlic and cook for another minute until fragrant.
  • Stir in black beans, diced tomatoes, chili powder, cumin, smoked paprika, and oregano, then season with salt and pepper. Add 1/2 cup chicken broth if the mixture seems too dry.
  • Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10-15 minutes to meld the flavors.
  • While the filling simmers, warm your tortillas using a dry skillet, microwave, or oven.
  • Once the filling has simmered, stir in half of the shredded cheese until melted and fully incorporated.
  • Serve the chicken and black bean filling hot with warm tortillas, topped with the remaining cheese, fresh cilantro, a squeeze of lime juice, and optional toppings like sour cream, salsa, or avocado.

Notes

For a spicier kick, add a pinch of cayenne pepper with the other spices.
