  • 1 large zucchini chopped
  • 1 cup cherry tomatoes
  • 1 red onion cut into wedges

  • 1/2 tsp garlic powder
  • 1/2 lemon juice

  • Preheat your oven to 400°F (200°C) to prepare for roasting.
  • On a large baking sheet, combine the chicken, zucchini, cherry tomatoes, and red onion.
  • Drizzle with olive oil, lemon juice, Italian seasoning, garlic powder, salt, and pepper, then toss until all ingredients are evenly coated.
  • Spread the mixture in a single layer on the baking sheet for even cooking.
  • Roast for 20-25 minutes, flipping halfway through, until the chicken is cooked and vegetables are tender-crisp.
  • Serve immediately after roasting.

Notes

For extra flavor, consider marinating the chicken for at least 30 minutes before roasting. You can also add other vegetables like bell peppers or broccoli florets to the mix. Ensure not to overcrowd the baking sheet to allow for even cooking and browning.
