  • 1 pound large shrimp peeled and deveined (fresh or frozen, thawed)
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1/2 cup chicken or vegetable broth (or white wine for extra flair)
  • 3-4 tablespoons lemon juice from 1 large lemon
  • 2 tablespoons unsalted butter
  • 1/4 cup fresh parsley chopped
  • salt
  • freshly ground black pepper

  • Pat the shrimp dry and season lightly with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Cook shrimp for 1-2 minutes per side until pink; remove and set aside.
  • Reduce heat to medium, add minced garlic and cook for 30 seconds until fragrant. Pour in broth and lemon juice, simmering for 2-3 minutes to reduce the sauce.
  • Remove from heat, stir in butter until melted, then return shrimp to the skillet and toss to coat. Stir in parsley, adjust seasoning, and serve immediately.

Notes

Serve this zesty shrimp over pasta, rice, or with crusty bread to soak up the delicious sauce. It's also great as a light appetizer!
