  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 bell pepper (any color) diced
  • 1 cup chopped zucchini
  • 1 cup chopped cherry tomatoes
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and freshly ground black pepper to taste

Cooking Steps

  • Heat olive oil in a large skillet over medium-high heat, then add ground turkey and cook until browned, draining excess fat.
  • Push the turkey aside, add diced onion and sauté for 3-4 minutes until softened, then add minced garlic and cook for one minute until fragrant.
  • Stir in bell pepper and zucchini, cooking for 5-7 minutes until tender-crisp.
  • Add cherry tomatoes, oregano, and basil, seasoning with salt and pepper, then cook for 3-5 minutes more; stir in spinach or kale if desired.
  • Remove from heat, optionally squeeze lemon juice over the top for brightness, and serve immediately.

Notes

This dish is highly customizable; feel free to add other vegetables like mushrooms or corn. For an extra kick, a pinch of red pepper flakes can be added with the dried herbs.
