  • 1 lb large shrimp, peeled and deveined, tails on or off
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper optional
  • Salt and freshly ground black pepper to taste
  • 1 head broccoli, cut into florets
  • 1 red bell pepper, seeds removed, sliced into strips
  • 1 yellow bell pepper, seeds removed, sliced into strips
  • 1 pint cherry tomatoes
  • 1/2 red onion, thinly sliced optional
  • Fresh lemon wedges for serving
  • Fresh parsley or cilantro, chopped for garnish (optional)

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  • In a medium bowl, combine the shrimp with 1 tablespoon of olive oil, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), salt, and pepper; toss to coat.
  • In a separate large bowl, combine broccoli, bell peppers, cherry tomatoes, and red onion (if using); drizzle with the remaining 1 tablespoon of olive oil, season with salt and pepper, and toss well.
  • Spread the seasoned vegetables in an even layer on the prepared baking sheet.
  • Scatter the seasoned shrimp over the top of the vegetables in a single layer.
  • Roast for 12-15 minutes, or until the shrimp are pink and opaque and vegetables are tender-crisp.
  • Remove from the oven, squeeze fresh lemon juice over the top, and sprinkle with fresh parsley or cilantro if desired. Serve immediately.

Notes

For extra crispiness, ensure vegetables are not overcrowded on the baking sheet. If you prefer a spicier dish, increase the amount of cayenne pepper. This recipe is also great with other quick-cooking vegetables like asparagus or zucchini.
