Ingredients
  

Shrimp and Seasoning

  • 1 lb large shrimp peeled and deveined, tails off
  • 1 tbsp olive oil
  • 3 garlic minced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh cilantro chopped
  • 1/2 lemon Juice of
  • 1 tsp paprika
  • 1/2 tsp red pepper flakes optional
  • Salt and black pepper to taste

Quinoa and Toppings

  • 1 cup quinoa cooked according to package directions
  • 2 cups fresh spinach
  • 1/2 avocado diced
  • 1/4 cup cherry tomatoes halved

Instructions
 

Prep Shrimp

  • If using frozen shrimp, thaw completely and pat dry.
  • In a bowl, combine shrimp with olive oil, minced garlic, paprika, red pepper flakes, salt, and pepper; toss to coat.

Cook Shrimp

  • Heat a large skillet over medium-high heat.
  • Add shrimp in a single layer and cook for 1-2 minutes per side until opaque and pink.

Finish Shrimp and Assemble

  • Remove from heat and stir in fresh parsley, cilantro, and lemon juice with the cooked shrimp.
  • Divide cooked quinoa between two bowls and top with fresh spinach.
  • Evenly distribute the shrimp mixture over the spinach.
  • Garnish each bowl with diced avocado and halved cherry tomatoes; serve immediately.

Notes

For extra flavor, marinate the shrimp for 15-30 minutes before cooking. You can also add other vegetables like bell peppers or zucchini to the skillet with the shrimp for added nutrients.
