  • 1 pound shrimp, peeled and deveined fresh or frozen, thawed
  • 2 tablespoons olive oil
  • 3-4 cloves garlic, minced
  • 1/2 small onion, finely diced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream optional
  • 1/2 lemon, juiced
  • 2 tablespoons fresh parsley, chopped
  • Salt to taste
  • Black pepper to taste
  • Red pepper flakes to taste (optional)
  • spinach A handful (optional)

Instructions
 

Preparation

  • Pat the shrimp dry and season with salt and pepper.

Cooking

  • Heat olive oil in a large skillet, then add diced onion and cook until softened.
  • Stir in minced garlic and cook until fragrant, being careful not to burn it.
  • Add seasoned shrimp to the skillet in a single layer and cook until pink; remove and set aside.
  • Reduce heat, pour in broth, and scrape up browned bits; if using, stir in cream and simmer.
  • Return shrimp to the skillet, stir in lemon juice and parsley, and wilt spinach if using.

Serving

  • Taste the sauce and adjust seasonings as needed.
  • Serve immediately.

Notes

For extra flavor, you can add a splash of white wine with the chicken broth. This dish is excellent served over pasta, rice, or with crusty bread for soaking up the sauce.
